AI, Luxe & Loyalty: What’s Shaping the Future of Aussie Dining in 2025

SYDNEY, 17 April 2025 – New data from SevenRooms reveals Australian diners are chasing more than just a great meal — they want luxury, personalisation, and tech-savvy service. According to the 2025 Australia Restaurant Trends Report, AI and experience-led hospitality are transforming the industry, with two in three restaurants already using AI and nearly all of them (99%) seeing real benefits.

Key findings from the report include:

  • AI Adoption Soars: 65% of restaurants are using AI to enhance operations, especially in marketing (46%) and customer service (37%). Yet only 27% use AI for reservations, despite 74% of diners saying they’re comfortable with AI-assisted bookings.
  • Experience = Loyalty: 74% of Aussies are more likely to return to a restaurant after a unique experience. Diners are willing to pay more for customised menus, live entertainment, and curated touches.
  • Personal Connections Matter: 82% of consumers say personal interactions (like a chef visit or host welcome) can make or break a return visit. But 41% of restaurants struggle with personalisation and 29% say they lack the tools.
  • New Revenue Streams: 77% of consumers would buy non-meal items like pantry goods, cocktail kits, or cookbooks from their favourite venues — signalling growing opportunity for hospitality retail.
  • Discovery Is Digital (But Not Influencer-Led): Google is still king for restaurant discovery (34%), while Gen Z prefers social (73%). Surprisingly, only 8% are swayed by influencers. Nearly half of operators (48%) are investing in paid Google Ads for 2025.
  • Marketing That Works: Email remains the top channel (74% of diners prefer it), with automated campaigns driving 11X more revenue than batch emails. Text marketing shows a 24X ROI, but only 38% of restaurants are planning to invest.
